Black Bean and Corn Dip
Every once in a while I just want to sit down in front of the TV with a big bag of chips and a bowl of dip. This is my go-to recipe for a quick and easy snack, or something I can throw together in a pinch for a party! This black bean and corn dip is super healthy for you (if you don’t count the tortilla chips), so I don’t mind letting my kids snack on it. I also love to throw it on tacos, in quesadillas, or honestly just eat it with a spoon (haha!). I almost always have the ingredients on hand, and it literally just takes a few minutes to throw together.
Recipe:
1 can sweet corn
1 can black beans (or another preferred variety)
1/4 cup chopped cilantro
1 teaspoon minced garlic (I always keep a jar of this in my fridge)
3-4 Roma tomatoes, diced
1/2 large onion, finely chopped
Juice of one lime (about 2 tablespoons)
Salt and Pepper to taste
Optional additions:
1-2 avocados, diced
1/2 bell pepper, finely chopped
Dash or two of tobasco sauce (to add some heat)
1 tablespoon crushed red pepper (add some more heat)
Drain and rinse cans of beans and corn. Chop, dice, and mince ingredients. Mix everything together with a spoon. Enjoy.
